Canola oil, for deep-frying
1⅔ cups cream cheese, softened to room temp
2 cups shredded dry mozzarella
2 tsp ground cumin
1½ tsp ground coriander
1½ tsp paprika
1 generous pinch cayenne, more or less, to taste
5 large eggs
3 Tbsp milk
1⅓ cups all-purpose flour
Kosher salt
Freshly ground black pepper
4 cups panko breadcrumbs
